Vegetable Mole Chili (with Raisins!)

1 tsp Olive oil
1 1/2 Cups TVP (Textured Vegetable Protein)
1 Cup Chopped onions
1 Cup Chopped green peppers
2 Tbs Chili powder
4 Garlic cloves
1/4 Cup Mole sauce
2 14oz Cans Vegetable broth

1 Cup Raisins
1/2 tsp Salt
1/2 tsp Pepper
19 oz Can Black beans, drained
14 oz Can Diced tomatoes
4.5 oz Can Green chilies, drained
1/2 Cup Fresh cilantro, chopped

In a bowl, cover TVP with hot water. Soak for 5-10 minutes. Drain on paper towel, press out. In Dutch oven or tall pot, heat oil, onion, pepper, chili powder, garlic. Cook for 5 minutes.

In a separate bowl, combine molé and vegetable broth, stir. Add broth mixture, TVP, raisins , salt, pepper, black beans, diced tomatoes, and green chilies.

Bring to a boil, and reduce heat. Simmer on low for 20 minutes up to an hour. Serve with fresh cilantro.
