Coconut Breakfast Quinoa with Blackberries and Ginger

Ingredients:

1 cup quinoa
1 can coconut milk
1 package blackberries
1/2 teaspoon cinnamon
3 T sliced crystallized ginger

Preparation:

Place quinoa and milk into medium saucepan. Bring to a boil, then cover and cook over low heat for 15-20 minutes until fluffy. Add cinnamon, blackberries, and ginger. Stir until warm.
