Roasted Red Pepper, Caper, Pine Nut, and Kale Salad

Kale Salad

I made this two days in a row (with a few changes). It is a good, substantial salad. I ate it with trader joe’s sweet potato tater tots and bbq sauce mixed with hot sauce. yum!

Ingredients
Kale
Roasted Red Peppers
Capers
Toasted Pine Nuts

Dressing
Dijon Mustard
Honey
Olive Oil
Balsamic Vinegar
Salt, Pepper, dried Thyme

Mix up all of the ingredients in a large bowl. Add a squirt of mustard and honey. Add some olive oil and balsamic vinegar..then the seasonings. Mix it all up with a fork. Transfer to a normal sized bowl.

*variations: for an asiany salad, use pumpkin seeds instead of pine nuts, add toasted coconut, replace balsamic vinegar with soy sauce, add a touch of sesame oil
